Fried Mashed Potato Balls
Shredded Buffalo Chicken
As always, spray crock pot with non stick cooking spray. |
Boneless skinless chicken thighs. |
Buffalo Ranch Sauce covering chicken thighs. On low 5-6 hours. |
Thighs pulled out of sauce and shredded (Really it falls apart at this point. |
Shredded chicken back in crock pot and Buffalo Ranch Sauce with ½ stick unsalted butter. Once butter is melted and stirred in chicken is ready for tacos, burritos, nachos, dips, pizza, salads, wonton wrappers or whatever else you can think of. |
Jerk Pineapple Wings
Store bought marinade and pineapple juice. |
Marinade mixture poured into Ziploc bag with fresh chicken wings. Refrigerate for 4-24 hours. |
Store bought marinade and pineapple juice mixed together in a jar. Half was reserved for basting wings as they grilled. |

Buttermilk Brined Chicken Wings
A dozen fresh chicken wings, 2 cups buttermilk, 2 tablespoons Old Bay seasoning, 1 teaspoon onion powder and 1 teaspoon garlic powder. |
Mix seasonings into buttermilk and pour over wings. Cover and refrigerate for 4-6 hours. |
Remove wings from buttermilk mixture and pat completely dry with paper towels. |
Deep fry wings in two batches for 3 minutes. |
Fried wings on a covered pan, seasoned with Hot Old Bay Seasoning for transport to the preheated grill. You could also bake these at 450 for 20 min turning once. |
Seasoned side down to start. Grill for 10 minutes. |
Season other side before turning and grilling for another 10 minutes or until internal temperature is 165° F. |
Clean sheet of foil for transport back inside to enjoy delicious juicy on the inside and crispy on the outside wings. |

Grilled Turkey Breast
2 Quarts water, ¼ cup smoked salt, ¼ cup brown sugar, bay leaves and garlic cloves for brine. |
Boneless skinless Turkey breast. |
Brine turkey for 5-6 hours. |
Rub oil/spice mixture on all sides of breast. |
Grill skin side down on direct heat for 10 min. Flip to indirect heat on other side for 25-30 min until internal temp is 170°. |
Let rest for at least 5 min to let juices redistribute. |
Slice thin and serve! |
